Grapes of the Chenin variety are harvested when ripe from the family vineyards on Catherine's side, in Vernou sur Brenne, where organic methods are used. Slow pressing, vinification in top-quality barrels.
We have lovingly coaxed it from the barrel, adding nothing and taking nothing away, to let it give free rein to its talents. The yeasts eat away at the natural surviving sugars and from this feast comes an explosion of bubbles, thus preserving its spontaneity.
A 100% natural sparkling wine, to be drunk very chilled and savoured as a rare sweet treat.
