The Nuits d’Ivresse vintage is the product of the clayey-limestone soil of the Benais and Restigné terroirs. Based on a quest for pure fruit according to the principles laid down by Jules Chauvet, a 'Pure Origin' wine without chemical additives.
- Selection of vines on the clayey-limestone soil of Benais (terroir known as Grandmont) and Restigné (terroir known as Le Peu Muleau).
- Malolactic fermentation in a twice-used barrel without the addition of sulphur dioxide either during harvesting, vatting or vinification.
- Aged in wooden casks without sulphur dioxide.
- Bottled in December 2006 without the addition of sulphur dioxide.
- Free of chemical anti-oxidants (sulphur dioxide = SO²), this wine should be stored at a temperature below 14°c and away from light.
